However, the white margin between the flesh and the outer shell is often cut off and discarded. With a few simple tricks, you can turn this border into delicious snacks.

Summer snack watermelon: The white edge is edible

The width of the white border between the skin and the meat is one to two centimeters. The more ripe the melon, the thinner the edge. “This white part is edible and contains valuable substances such as vitamins C and B6,” Susanne Moritz, a nutrition expert at the Bavarian Consumer Advisory Center, said on her website. However, the dark green outer shell is actually inedible and must be removed before further processing. All you have to do is separate the red pulp from the white edge and then peel it off with a vegetable peeler.

If this is too complicated for you, with a little patience, you can pickle the melon pieces in a sweet way. “Chip” has a simple recipe for this: the white edge is again cut into small pieces and boiled in a pot with a spoonful of salt and water. Melon pieces are then placed in a mason jar and filled with one part water and one part honey, as well as a spoonful of sugar. If you are willing to experiment, you can add spices such as cinnamon, cloves, lemon or ginger to the glass. When the pieces of melon are covered with liquid, they are closed in a jar and placed in the refrigerator for at least six hours. Melon chunks are then significantly softer and sweeter.

Indian dish: Process leftover watermelons heartily

In the northern Indian state of Rajasthan, watermelon rinds have long been part of the table. Instagram channel “rootedinspice” has now shared a hearty Indian recipe. For this, the white edge of the watermelon is cut into pieces and boiled in water for 20-25 minutes. Melons are dry when they can be easily pierced with a fork.

A spoonful of oil is heated in a pan. Spices sweat in it: For this, you put half a teaspoon of coriander, chili powder and cumin in the pan. Add a pinch of turmeric. If you like it spicy, you can add dried chillies to the pan. Then the spices are thrown into the heated oil for 30 seconds, then the melon pieces are added again. Finally, sprinkle with salt and dried mango powder if desired.

Watermelon seeds are edible

Not only the white border between the flesh and the skin, but also the seeds are healthy. “Watermelon seeds are also edible, but must be crushed,” writes the Bavarian consumer advisory center on its website.
