Bake a cauliflower cake with curry – a recipe for the dough
The specialty of the pie is that the dish has a dough cover. So you also need the right pastry recipe for your curry cauliflower pie. It’s so easy to get the dough for the pie:
For a baking dish about 32 cm ∅:
- 400 grams of flour
- 220 g very cold butter

First, mix the dry ingredients together. Cut the cold butter into cubes and briefly knead into the dry ingredients with a hand mixer until a coarse, crumbly mass is formed. Fillings for curry paste
You’ve made the dough – so far so good. But if you want to make curry cauliflower pie, what can you fill it with? You can leave it out with cauliflower, replace it with potatoes, or add chickpeas. Here are some recipe ideas:
Cheesy cauliflower with curry and coconut milk
- 700 g of cauliflower is washed and cut into florets
- 150 g Emmental cheese, chopped
- 4 tablespoons grated Pecorino or Parmesan
- 2 teaspoons ground, mild curry powder
- 1 bunch of fresh parsley
- 150 ml of coconut milk
- 3 egg yolks

Heat the salted water in a pot and cook the cauliflower florets for 10 minutes (they should be slightly softened but not fully cooked). Prepare a base in the mold (it should be worn generously). Bring the coconut milk to the boil in a saucepan and then add the Emmental. Stir until completely dissolved. Strain the curry, stirring constantly to avoid lumps. Remove the milk from the stove, add 2 egg yolks and mix.
Heat the oven to 180 degrees. Drain the cauliflower and toss it into the milk mixture in a bowl. Now add the parsley and distribute the mass in the prepared form with the base. Spread the other cheese on top and fold the edge of the dough inward. Brush with the third egg yolk and sprinkle everything with paprika powder. Bake the curry and cheese cauliflower pie until golden brown, about 25 minutes.
With potatoes or peas
You can make cauliflower with potatoes. For this, it is enough to reduce the amount of cauliflower and add potatoes instead. You can cook these in advance, preferably with cauliflower. After mixing these ingredients with the cheese sauce as described above, pour the mixture into the mold along with the dough and bake the delicious dish. Cauliflower and chickpea curry is also delicious.
Without coconut milk
Don’t have coconut milk in the house right now and wonder if you can substitute it for a recipe? Yes, even with different products, you have free choice! For example, you can instead:
- Use cream or even soy or oat cream, the latter has a slightly sweet taste and is therefore most similar to coconut milk.
- Greek yogurt also has the right consistency, but is less sweet. You can fix this by adding a little honey, agave nectar, or something else to sweeten (if you like).
- Cream cheese, like yogurt, provides a creamy consistency. But you need to dilute it with a little water. Alternatively, if you want to add a little spice to everything, broth is also suitable for this purpose.
- Or make a simple béchamel sauce.
