Rhubarb Pie: Perfect for the spring season!

This rhubarb pie wraps a fruity filling in a crunchy pastry.  Decorated with pink hearts, this cake is a real eye-catcher!

This rhubarb pie wraps a fruity filling in a crunchy pastry. Decorated with pink hearts, this cake is a real eye-catcher!

With our fruity rhubarb cake, you can use the vegetables you have picked from the garden and make a delicious cake!

Ingredients for 15 servings:

  • 300 grams of flour
  • 100 g of powdered sugar
  • Salt
  • 2 eggs (M)
  • 200 grams of cold butter
  • 650 g of rhubarb
  • 3 tablespoons of raspberry jelly
  • 100 g ground almonds
  • 100 g of powdered sugar
  • 1 tablespoon of milk
  • red food coloring

Per serving approximately:

  • 300 calories
  • 15 grams of fat
  • 33 grams of carbohydrates
  • 5 grams of protein

Preparation time:

  • 45 minutes (plus 60 minutes cooling time and 20 minutes cooking time)

And this is how it is done:

  1. Mix flour, powdered sugar and 1 pinch of salt. Add 1 egg and butter and knead quickly to get a smooth dough.

  2. Cover and chill for about 1 hour. Meanwhile, clean, wash and cut the rhubarb into pieces. Mix until the jelly is smooth, mix with rhubarb and 50 g of almonds.
  3. Roll out about 2/3 of the dough on a floured work surface into a rectangle (about 40 x 18 cm). Line a greased cake pan (approx. 36 x 14 cm; with a riser base) with the batter and press firmly to the edge. Preheat the oven to 180 degrees.
  4. Sprinkle with 50g of almonds and distribute the rhubarb on top. Shape the remaining dough into a rectangle. Cut several hearts (about 4 + 5 cm) from it.
  5. Carefully place the pastry sheet over the rhubarb and press down on the sides. Beat 1 egg, brush the dough with it and put the cut hearts on it.
  6. Brush the hearts with egg as well. Bake in a hot oven on the lower rack for 20-25 minutes. Leave to cool after cooking.
  7. Mix powdered sugar with milk until smooth and color pink. Remove the cake from the mold. Spread the hearts with the frosting, let dry and then serve.
