Ingredients for rolls (8 pieces):

Place the flour in a large bowl. Make a well in the middle and crumble fresh yeast into it. sprinkle with sugar. Mix 1 cup of warm tap water with your fingers to form a smooth paste. Cover the bowl with a kitchen towel and let the dough rise for about 15 minutes. It should be about double.

For the green color, wash the spinach, drain it in a strainer, put it in a blender with water and puree it well. Add spinach mixture, salt and oil to the dough and mix everything with your hands.

Sprinkle a handful of flour on the work surface. Place the dough on a work surface and knead vigorously with your hands for about 5 minutes, then form into a ball. Ferment again in a closed container for 1 hour.

Knead the risen dough briefly, divide it into pieces of equal size, shape them into long rolls and place them on a baking sheet. Bake in a preheated oven at 175 degrees on the lower rack for about 25 minutes. Allow loaves to cool until warm and cut with a bread knife.

Ingredients for Apple Mustard Sauce:

While stirring, thicken the apple pulp with psyllium husks. Then mix with coarse mustard and salt.

If you don’t like mustard but like it spicy, you can buy pure plant-based mayo and mix it with chili paste to make chili mayo.

Ingredients for sweet and sour onions:

Place the red wine or apple cider vinegar, sugar, salt, chili flakes, and mustard seeds in a mason jar and mix well.

Peel and cut the onions in half, remove the stem. Cut the onion into long strips. Pour the vinegar mixture over it and refrigerate for at least 3 hours, preferably overnight.

service:

Soak the tofu sausages in hot water (do not boil!). Place hot sausages on sliced ​​buns, spread with apple and mustard sauce and garnish with sweet and sour onions. Top with butter or sprouts if desired.
