Berries and Crushed Oatmeal Bars: For a little snack in between


A healthy and low-calorie snack is always a thing. Not anymore, because with our berries and oat bars, you can snack without guilt.

  1. Preheat the oven to 170 degrees and lower heat. Line a high sided baking tray (about 24 x 32 cm) with baking paper. Mash the bananas with a fork and mix with the butter and eggs.

  2. Add oats, ground almonds, baking powder, cinnamon, salt and honey and mix well. Spread the mixture evenly on the tray and chill for about 30 minutes.

  3. Melt butter to crumble. Mix the sugar, flour, almonds and rolled oats and rub in the butter. Refrigerate until ready to use.

  4. Meanwhile, pick the berries, wash and drain. Bring the honey to a boil in a pot and boil for about three minutes. Mix the starch with lemon juice until smooth, add and cook for about two more minutes until the berries thicken. Allow to cool briefly, then spread the berries on the pastry base.

  5. Sprinkle over and bake the cake in the oven for 25-30 minutes until the sprinkles are nicely browned. Remove, cool, cut into pieces and serve oatmeal.
