Shepherd’s Pie style Potatoes stuffed with minced beef and cheese mash

Do you know Shepherd’s Pie? In this British classic, minced peas and carrots are combined with vegetables and heavenly puree. Today, we’re bringing you the mini version—in the form of sophisticated, stuffed potatoes.
Ingredients for 4 servings:
8 large potatoes, waxed
3 onions
300 g of minced beef
a little oil
200 g peas and carrots, canned or frozen
Salt and pepper
Oregano, dried
Thyme, dried
4 tablespoons of grated parmesan
4 tablespoons of sour cream
Nutmeg, grated
fresh parsley, chopped
Preparation time:
about 30 minutes (plus about 20 minutes of cooking time)
And this is how it is done:
First, preheat the oven to 180 degrees. Wash the peeled potatoes well and then pre-cook them in a pot of salted water for about 15 minutes. Potatoes should not be too soft!
In the meantime, peel and finely chop the onion, then fry the meat in a pan with the mince until it crumbles. Stir in the vegetable mixture and season with salt, pepper, oregano and thyme.
Cut the pre-cooked potatoes in half lengthwise. Use a teaspoon to scoop out the cavities in the potato halves. Put the breaded potato mixture in a bowl and mix with the Parmesan and sour cream, then sprinkle with salt, pepper and a little grated nutmeg.
Now it’s time for the stuffing: Fill the potato wells with minced meat and spread the mash on top. Put the stuffed potatoes on a baking sheet lined with baking paper, place in the middle of the oven and bake for about 15-20 minutes. The puree should be lightly fried. You can use a fork to check that the potatoes are cooked well. If not, increase the cooking time by five minutes. Sprinkle with fresh, chopped parsley before serving – and enjoy!
