Hearty cake with eggs, bacon, tomatoes and mushrooms – very filling and tasty!

We found the recipe for this delicious cake in old GDR cookbooks. Long before someone called it Bacon and Egg Pie. A true hearty classic that goes perfectly with spring. Anyone can cook. Feel free to try it.

What do you need:

For the dough

300 grams of flour, 100 grams of butter, 75 grams of lard, salt, turmeric, 1 egg yolk

For filling

400 grams of bacon or pork slices, 1-2 tomatoes, 3-4 mushrooms, 1/2 bunch of cucumbers, 8 small eggs

For the actor

2 eggs, 125 milliliters of milk, salt, pepper

For decoration

2 tomatoes, a little onion

This is done like this:

For the dough, put flour, butter, fat and salt in a bowl and mix everything well with a food processor. It is better to use a dough hook. It should be a “crushed” mass that you can refine with a little turmeric (not necessary).

Gradually add the egg yolks and enough water to make a smooth batter. Be careful not to overheat the dough. Then wrap the dough in parchment paper and refrigerate for at least 30 minutes.

Meanwhile, fry the pork in a pan until crispy. Remove the seeds from the tomatoes and cut them into small cubes. Cut the mushrooms into slices.

Remove the bacon from the pan and sauté the mushrooms in the resulting roasting pan. Finely chop the mushrooms and add them to the mushrooms along with the tomatoes and bacon.

Eggs, milk, salt and pepper are mixed for the glaze.

Now take the dough out of the fridge and divide it into two parts. Attention: One part should be twice as big as the second.

Roll out the large portion and place on a greased baking sheet (or cake pan). Make sure the dough comes out a little so you can close the lid more easily later. I

Now pour the bacon mixture into the mold. Crack the remaining eggs carefully and place them next to the bacon. The yolk must remain intact! Now carefully distribute the icing into the cavities. Be sure to reserve a few tablespoons of the mixture.

Roll out the second half of the dough slightly larger than the shape you are using. Pour the batter into the pan and combine both batters with a little frosting. It is good to close the dough well and fold it inward to create a beautiful pattern.

Make a large hole in the middle of the cake to let the steam escape. You can use the remaining dough to create decorative elements that you can glue with “molding”. Cover the entire surface again with the remaining frosting.

Put the cake in the oven preheated to 200 degrees. Immediately reduce the temperature to 180 degrees and cook for 30-45 minutes. It’s done when the surface is golden brown and the inside is completely dry.

Garnish with tomato slices and some onion. It’s over.
