Rappie Pie The legendary Canadian stew with fried potatoes

You only need a few ingredients and Rappie Pie is ready. Delicious potato casserole from Canada!
You have definitely never eaten potato casserole like this – with fried potatoes and delicious chicken. Try a Canadian specialty called rappie pie.
Ingredients for 8 servings:
2 tablespoons of butter
2 onions
2 liters of chicken broth
1 kg of chicken breast
2.5 kg of potatoes
Salt and pepper
Per serving approximately:
434 calories
6 grams of fat
55 grams of carbohydrates
35 grams of protein
Preparation time:
40 minutes (plus 1 hour cooking time)
And this is how it is done:
First, melt the butter in a pan. Peel and finely chop the onions, then fry in oil. Fry on medium-high heat until it turns a nice golden color.
Place in a large pot and bring the chicken broth to a boil. Drain and cut the chicken breasts into large pieces – then add them to the stock and cook until the meat is tender, which should be about 20 minutes. Now remove the meat from the broth with a slotted spoon and set both aside.
Peel the potatoes and finely chop them with a grater. Place the mashed potatoes on a clean cotton tea towel and squeeze well to remove the liquid. Place the drained potatoes in a bowl and season with salt and pepper. Pour in some chicken stock to make it the consistency of oatmeal.
Grease a large casserole dish with butter and pour in half of the potato mixture. Now spread the onion on top, followed by the chicken breast. Place the remaining potato mixture on top as a topping.
Heat the oven to 180 degrees and cook the stew for an hour. Drizzle some chicken broth over the ingredients to keep the dish from drying out. That’s it – Rappie Pie is ready!
