For the dough:
For the dough, first mix the flour with sugar and salt and add the butter in parts. Finely grate the cheese and add it too. Knead everything together and add enough water to form a firm dough ball. Cover and chill in the refrigerator.
When the dough has cooled, peel the apples and cut them into thin cubes. Mix the apple pieces with sugar, flour, cinnamon and nutmeg in a bowl and leave to stand. Grate more cheese and mix into the mixture, except for a handful.
Divide the shortcrust pastry into larger and smaller pieces and roll between two pieces of cling film. Preheat the oven to 180 degrees and grease a cake or pie pan. Beat the egg and whisk.
Place the larger flatbread in the pan and press it to the edge. Add the filling and place the smaller flat one on top. Crimp the edges and make some slits for the heat to escape. Brush with beaten egg and sprinkle with a handful of cheese.
Bake the pie for about an hour. Then remove from the oven and cool. Get out of shape and enjoy!
