  • Preheat the oven to 180ºC. Line two 18cm round cake tins with parchment paper. Grease the inside of the molds well.
  • Whisk the flour and baking powder together in a medium bowl and set aside.
  • Finely chop the spinach in a blender.
  • In a large mixing bowl, beat the eggs and sugar with a stand mixer until fluffy and pale, 4-5 minutes.
  • Gradually add the butter, vanilla, and milk and beat one at a time until combined.
  • Fold the spinach into the batter with a rubber spatula. Finally, slowly add the flour mixture and mix on low speed (or gently with a spatula) until well combined.
  • Divide the dough between the two molds.
  • Bake for about 40 minutes or until a toothpick inserted in the center comes out clean. Allow cakes to cool to room temperature before slicing and assembling.
